50ml Vodka
100ml Ginger Beer
5 Blueberries
Juice of 1/2 Lime
200ml Ginger beer
30 Mint Leaves
20g Caster Sugar
3g Special Ingredients Lecithin Powder
Juice of 1/2 Lime
1 Drop Special Ingredients Lime Food Flavouring Oil
Sprinkle Crackle Crystals
Special Ingredients Mini Whisk Cocktail Foamer
Agitate the blueberries with the vodka and lime juice in the glass then fill the glass with ice.
Pour in the ginger beer.
Combine the ingredients and blend well. Now angle the head of the Special Ingredients Mini Whisk and Cocktail Foamer so that it is partially submerged in the liquid and blend to produce a light airy foam.
Finish the drink with a few spoons of the foam, then serve with a sprig of mint and sprinkle lime lest and crackle crystals over the drink and serve
