A classic rum, mint and lime cocktail finished with a fizzy powder on the rim of the glass - made with Special Ingredients Lime Flavouring Oil and Crackle Crystals.

10g Special Ingredients Crackle Crystals
5g Special Ingredients Zorbit
4ml Olive Oil
15g Caster Sugar
1 Drop Special Ingredients Lime Food Flavouring Oil
50ml White Rum
20ml Lime Juice
10ml Simple Syrup (See our own recipe)
Soda Water to top up
Mix all the ingredients together in a bowl using a whisk to make sure they are fully combined.
Dip the rim of a glass into a little olive oil then immediately dip the inverted glass into the sparkling powder. It should stick and coat the rim of the glass.
Agitate the mint slightly in the glass.
Add the rum, lime juice and simple syrup.
Add crushed ice then top up with soda water and finish with fresh mint leaves.
Serve the drink immediately in the prepared glass.
