Our Agar Agar is a high-quality refined powder of European origin. Its gel strength exceeds 900g/cm². Agar Agar is a versatile vegetarian gelling agent and thickener, mainly used as a superior vegan alternative to gelatine. Our Agar Agar gives high-quality odourless, colourless gels even at very low concentrations. It can produce firm, brittle, transparent, neutral gels that withstand acidic pH down to 3.5. Agar Agar gels melt in the mouth for excellent flavour release. It becomes soluble at approximately 90–100°C and sets as the solution cools to approximately 40–45°C. It can be heated to 85°C without melting. Its gelling properties make it valuable for modifying the structure of hot creams and mousses. Suitable for vegans and vegetarians, non-GMO, gluten-free, non-irradiated, unbleached.

How to use Agar Agar: dosage ranges from 2–10g per 1kg of solution. A firm jelly/gel requires approximately 7–10g. Soak Agar Agar in the liquid solution for 5–10 minutes, then slowly bring to the boil, stirring continuously until fully dissolved. Heat the solution to approximately 100°C. It then sets as it cools to approximately 40–45°C. Gelling ability is affected by ingredient acidity or alkalinity. Acidic fruits require larger quantities. Agar Agar's pH solubility range is 4.5–9.0. If insufficient Agar Agar was used, reboil the solution and add more to reach the desired consistency.

How to replace gelatine with agar agar

To replace animal gelatine with agar agar, use 1 g agar agar for every 6 g gelatine.

Dissolve the agar agar in your liquid and bring to the boil (95°C/203°F), stirring until fully dissolved.

Unlike gelatine, agar agar sets at room temperature and creates a firmer, more heat-resistant gel.

Agar Agar "Spherification": What It Is and How to Do It

What many call spherification with agar agar is not true spherification. True spherification requires sodium alginate and calcium lactate to form a gel membrane. Agar agar instead creates jelly spheres, or agar agar gel spheres.

How to make agar agar jelly spheres:

  1. Dissolve about 5 g agar agar in your chosen liquid.
  2. Heat to 95°C (203°F), stirring until fully dissolved.
  3. Meanwhile, fill a tall, narrow container with vegetable oil and place it in the freezer until very cold.
  4. Once the liquid reaches 95°C, use a syringe or dropper to pour the hot liquid into the cold oil.
  5. The sudden temperature change forms small jelly spheres.

These spheres are perfect for garnishing dishes, adding a visual touch to drinks or enhancing desserts. Although not true spherification, this agar agar method is simple, effective and versatile.
