Our agar agar is a high-quality, refined powder of European origin, with a gel strength greater than 900 g/cm². Agar agar is a versatile vegetarian gelling agent and thickener, primarily used as a superior vegan alternative to gelatine. Our agar agar produces high-quality, odourless, colourless gels even at very low concentrations. It can be used to make firm, brittle, transparent, neutral gels that withstand acidic conditions down to pH 3.5. Agar agar gels melt in the mouth, providing excellent flavour release. It becomes soluble at around 90–100°C and sets when the solution cools to approximately 40–45°C. It can be heated to 85°C without melting. Its gelling properties make it valuable for modifying the structure of warm creams and mousses. Suitable for vegans and vegetarians; non-GMO, gluten-free, non-irradiated and unbleached.

How to use agar agar: Dosage: 2–10 g per 1 kg of solution. Approximately 7–10 g is required for a firm jelly or gel. Soak the agar agar in the liquid for 5–10 minutes, then slowly bring to the boil, stirring continuously until all the agar agar has dissolved. Heat the solution to approximately 100°C. It then sets as it cools to around 40–45°C. Agar agar's gelling ability is affected by the acidity or alkalinity of the ingredients. Acidic fruit requires larger amounts. The solubility pH range is 4.5–9.0. If you have not used enough agar agar, you can bring the solution back to the boil and add more to achieve the desired consistency.
