Agar Agar is a versatile vegan/vegetarian gelling and thickening agent, primarily used as a superior vegan alternative to gelatin. Our Agar Agar provides superior quality, odorless and colorless gels even at very low concentrations. It is of European origin. It can be used to produce hard, brittle, clear and neutral gels that withstand acidic pHs up to 3.5. Agar Agar gels melt in the mouth, providing excellent flavor release.
How to use agar agar
The dosage of Agar Agar is between 2 and 10 g per 1 kg of solution. To obtain a solid jelly/gel, approximately 7-10 g will be needed. Immerse the Agar Agar in the liquid solution for 5-10 minutes, then gently bring to the boil, stirring constantly until all the Agar Agar has dissolved. Heat the solution to about 100 °C. The solution solidifies on cooling to about 40-45 °C. The gelling properties of Agar Agar are affected by the acidity or alkalinity of the ingredients. Acidic fruits require larger quantities. The pH solubility of Agar Agar is 4.5-9.0. If you have not used enough Agar Agar, the solution can be re-boiled and more added to obtain the desired consistency. In cosmetics, it is used as a base for masks and lotions due to its ability to retain moisture. The optimal dosage varies, but generally you need 1-2 grams per 100 ml of liquid to achieve the perfect consistency.
