What is gellan gum?
Gellan gum is a versatile, vegan-friendly gelling agent derived from natural sources. Special Ingredients offers two types: high acyl and low acyl. They are used to form gels, thicken preparations and stabilise food mixtures.
What is gellan gum used for?
Gellan gum is used in dairy products, fruit preparations and drinks to control texture and create gels. It is non-GMO, gluten-free and non-irradiated.
Where can I buy gellan gum?

What is the difference between the two types?
The degree of acylation affects the texture of the resulting gel:
- Gellan Gum LT100 (High Acyl) forms soft, flexible, elastic gels. It is suitable for preparations requiring a softer texture, including mousses and marshmallows.
- Gellan Gum Type F (Low Acyl) forms firm, clear gels and is suitable for preparations requiring a defined shape and clean cut. It produces heat-resistant gels.
Choose LT100 for softer, elastic textures and Type F for firmer, clearer gels. Gel properties also depend on the recipe and processing conditions.
