Directions
Cut the purple cabbage into pieces and wash thoroughly.
Add enough water to a saucepan to boil the cabbage, then reserve the cooking water.
Mix 500ml cabbage water with 2g agar agar in a saucepan. Bring to the boil, stirring continuously until the agar agar has completely dissolved.
Fill a syringe with the hot cabbage water and agar agar mixture.
Use the syringe to fill the spaghetti tube.
Leave the tube to cool in iced water for approximately 10 minutes.
Gently remove the agar agar and cabbage noodles from the tube.
Use the purple spaghetti as a garnish or as a base for innovative recipes.
