Noodles made with arrowroot flour

Ingredients

    For the noodles:

    For the stock:

    • Vegetable stock: 1 litre
    • Soya sauce: 30ml
    • Grated fresh ginger: 5g
    • Chopped garlic: 2 cloves
    • Sesame oil: 10ml

    For the garnish:

    • Kimchi: 50g
    • Chopped spring onion: 20g
    • Chopped nori seaweed: 10g
    • Toasted sesame seeds: 5g

    Directions

      Making the noodles:

      1. In a bowl, mix the arrowroot with water and salt until smooth. Pour into a saucepan and cook over a medium heat, stirring continuously, until transparent and thickened. Spread the thickened mixture over a surface lined with baking paper. Smooth into a thin layer with a spatula and leave to cool completely. Once cool, cut the arrowroot noodle sheet into thin strips.

      Preparing the stock:

      1. In a large saucepan, bring the vegetable stock to the boil. Add the soya sauce, grated ginger, chopped garlic and sesame oil. Simmer over a medium heat for approximately 10 minutes to combine the flavours.

      Cooking the noodles:

      1. Bring a saucepan of water to the boil and cook the arrowroot noodles for 2–3 minutes until soft. Drain and rinse under cold water to stop the cooking.

      Assembling the dish:

      1. Divide the noodles between bowls. Pour the hot stock over them and garnish with kimchi, chopped spring onions, chopped nori and toasted sesame seeds.

      Serving:

      1. Serve immediately, keeping the stock hot to maintain the texture of the noodles.
