Our gellan gum is a premium refined powder. This multifunctional gelling agent is used in food and personal care applications. It is ideal for a range of gelling, texturising, stabilising and film-forming applications, and is recommended for mixtures and applications with a high solids content. Suitable for vegans and vegetarians; non-GMO, gluten-free and non-irradiated.

How to use: Dosage: 0.5–2.0%. Water-soluble; requires heating to 100°C. Gelation occurs when the gellan gum solution is heated to 100°C and then allowed to cool. Gellan gum gels are stable in solutions with a pH of 3.5–8.0, making them suitable for a wide range of applications.

Storage: Store in a cool, dry place away from direct sunlight. Use within 6 months of opening.
