Create apple caviar pearls with the Special Ingredients spherification bottle to finish dishes and cocktails.

Ingredients
Apple Caviar Solution
- 300ml freshly pressed apple juice (Use an apple that is not too acidic e.g Braeburn or Cox)
- 4g Special Ingredients Sodium Alginate
- 20g Sugar
- 2 drops Special Ingredients Apple Food Flavouring Drop
Calcium Lactate Bath
- 500ml Water
- 5g Special Ingredients Calcium Lactate

Directions
Apple Caviar Solution
Mix the sodium alginate and sugar in a bowl.
Pour the apple juice into a stand mixer and start on the lowest speed. Very gradually add the alginate and sugar mixture, avoiding pouring directly onto the whisk in the centre, where it could stick.
Add the apple flavouring.
Continue mixing slowly for 10 minutes, then leave to rest for another 10 minutes. The mixture should have the consistency of a thick, lump-free syrup.
Calcium Bath
Dissolve the calcium lactate in the specified bath water, stirring well.
Caviar Pearls
Transfer the apple mixture to the spherification bottle.
Hold the bottle approximately 15 cm above the calcium lactate bath and squeeze steadily to form a stream of drops.
Leave in the bath for 1 minute to form the membrane. Gently lift out with a shallow sieve and transfer to a bowl of clean, cold water to rinse.
Drain the pearls: the apple caviar is ready to serve.
