Zorbit is a tapioca-derived maltodextrin specially designed to have very low bulk density. A carbohydrate made from broken-down tapioca molecules, it has low sweetening power and adds no calories. Used as a bulking agent, it can also absorb oils. Used in the food industry for drinks, dairy products, sweets, soups and many other products. Its main use is to increase the volume of dry mixes. Its mild flavour also makes it an excellent dispersant for dry ingredients in low-solids preparations. Zorbit is a very fine powder, readily soluble in hot or cold liquids. Mixed with oil (2 parts Zorbit to 1 part oil), it becomes a workable powder that dissolves completely on contact with an aqueous medium. Excellent for making sweet or savoury "soil". Can replace sugar in savoury ice cream or sorbet. Suitable for vegans and vegetarians, non-GMO, gluten-free, kosher-friendly and halal-friendly.
