Methocel (Methylcellulose - E461)
Methocel (methylcellulose) is purified cellulose used in food applications as a thickener, stabiliser and dispersant. It dissolves in cold water and gels in hot water, with the unique ability to form a gel above 45°C that becomes liquid again when cooled to approximately 15°C. Ideal for creating hot gels that melt in the mouth.
It can also produce solid, flexible, transparent films by allowing a Methocel solution to dry at low temperature to avoid gelling. Other uses include emulsification and suspension.

Directions for Use
Dosage: 0.5%–5.0%, depending on the application.
Methocel does not dissolve directly in cold water, as it would disperse unevenly and form lumps.
Correct Preparation Method:
- Add Methocel to hot water (approximately 70°C).
- Add twice the quantity of cold water.
- Stir and bring the solution to room temperature.
- Refrigerate for approximately 3 hours to dissolve completely.
Tip: To control water loss in hot gels, add xanthan gum to improve solution stability.
Storage
Store in a cool, dry place away from direct light.
Use within 6 months of opening.
