- 300g Grated Sweet Potato
- 2000ml Fresh Pineapple Juice
- 2g Special Ingredients Easy Whip
- 8 Drops Special Ingredients Pineapple Food Flavouring Drop

- Muslin Cloth
Directions
Blend the sweet potato with the juice and pineapple flavouring until puréed.
Strain through food-safe muslin into a clean bowl, squeezing to recover all the liquid.
Gradually blend in Easy Whip with a hand blender until fully dispersed.
Use a funnel to transfer the liquid to the whipper, respecting its maximum capacity. The original recipe specifies 2 N₂O cartridges: use the appropriate charge for your model according to the manufacturer's instructions. Refrigerate for 1 hour.
Before use, shake vigorously and dispense the espuma into serving containers.
