High-Ester Pectin

Our high-ester pectin is a high-quality powder extracted from selected fruit. Ideal for making marmalades, jams, chutneys and fruit jellies (pâte de fruit). Jellies made with this pectin are heat-resistant, making them suitable for culinary applications requiring high temperatures.

“High ester” refers to the degree of methylation of the pectin: the quantity of methoxy groups (-OCH3) attached to its structure. This type forms gels in the presence of sugar and acids without added calcium, making it particularly suitable for fruit-based jams and jellies with a high sugar content.

This pectin was developed for high gelling capacity, excellent flavour release and gradual setting. Suitable for vegans, vegetarians and ovo-lacto vegetarians. Non-GMO, gluten-free and non-irradiated.

Directions for Use

This pectin produces gels with a stable structure and uniform texture, enhancing the flavour of the fruit.

Recommended Dosage:

  • Marmalades and jams: 0.3%–0.8% (3–8 g per 1 kg)
  • Fruit jellies (pâte de fruit): 1.4%–1.8% (14–18 g per 1 kg)

The optimal dosage depends on the fruit's natural pectin content. Increase the dose if its natural pectin content is low.

For even distribution, mix the pectin with a little sugar before incorporating it. Add gradually, stirring continuously. Once the pectin dissolves, bring the mixture to the boil for one minute. Leave to cool at room temperature, then refrigerate to complete gelling.

If the jelly does not reach the desired consistency, boil it again and add more pectin. For low-acid fruit, add lemon juice or citric acid to help it set.

Storage

Store in a cool, dry place away from direct light. Use within six months of opening.

Dosage and use

How to use

10 g per 1 kg of fruit and 500 g of sugar: mix the pectin with the sugar, add to the fruit and boil for 3–5 minutes.
