Isomalt (E953)
Isomalt is a sugar alcohol extracted from sugar, providing just over 2 calories per gram. It is odourless and highly soluble, with a solubility of 24 g in 100 g of solution, increasing with temperature. A major advantage is that it does not absorb moisture at 25°C and 85% relative humidity. Its hygroscopicity is lower than that of other polyols and sugar, giving products greater stability during storage.
Isomalt has high heat resistance and does not melt below 145°C. Its chemical structure does not change at normal cooking temperatures. Products made with isomalt retain their full aroma and flavour, allowing hard sweets with delicate, lasting flavours. Unlike other polyols, it does not produce an unwanted cooling effect and can be used with any flavouring. It is less sweet than sugar, with approximately 60% of its sweetness, without changing its natural taste.

Directions for Use
Boil 1 kg of isomalt with ½ litre of water to 165°C. Add colours and flavourings at 140°C.
Solubility: 24 g in 100 g of solution at 24°C, increasing with temperature.
Storage
Store in a cool, dry place away from direct light. Use within 6 months of opening.
