- 85ml orange juice
- 15ml lemon juice
- Lemon and orange zest
- 1% agar agar

Method
- Mix the liquid with 1% Specialingredients.it agar agar (for example, 100g liquid – 1g agar agar). Bring to the boil.
- Leave a thin layer of gel to form on a baking tray.
- Cut out the veil with a pastry cutter.
