A variation on a Mojito with ginger beer, lime and fresh mint, finished with watermelon caviar made with Special Ingredients sodium alginate.

Watermelon Mojito with molecular caviar

Ingredients

    Watermelon mojito

    Watermelon caviar

    • 240ml watermelon juice
    • 10g white rum
    • 50g caster sugar
    • 1.5g Special Ingredients sodium alginate

    Directions

      Watermelon mojito

      1. Stir the cocktail ingredients in a glass with ice to chill, then strain into another glass.

      Watermelon caviar

      1. Blend all the caviar ingredients thoroughly and strain through a sieve or muslin to remove air bubbles.

      2. Using a pipette or syringe, drip the watermelon mixture into a calcium chloride bath to form small pearls.

      3. Leave to react for 30 seconds, remove with a slotted spoon and rinse in clean water.

      4. Pour the cocktail into a glass or serving test tube, add the watermelon caviar, stir gently and garnish with fresh mint.
