Coffee jelly with agar agar: a creative vegan dessert
Discover perfect coffee jelly with agar agar: a simple, elegant dessert
Have you ever tried making an elegant, stable and entirely plant-based coffee jelly? The secret is agar agar, a natural, versatile ingredient for anyone seeking an alternative to animal gelatine without compromising quality or texture.
Agar agar is a gelling agent extracted from red seaweed, highly valued in modern cooking, particularly plant-based patisserie and molecular gastronomy. Unlike traditional gelatine, it is activated by heat and sets at room temperature, producing a clean, glossy finish and neat slices.
This coffee jelly is perfect at the end of a meal, as an insert in spoon desserts or a creative topping for desserts served in glasses. Flavour it or pair it with cream, chocolate or spices to surprise guests with a soft yet stable texture and a rich, deep flavour.
If you want an easy way to incorporate agar agar into sweet preparations, this recipe is the ideal starting point. A little product goes a long way, even for beginners.
Agar agar comes in powder form, is gluten-free, vegan and 100% natural, and is a must-have in any creative cook’s cupboard.

Ingredients
- 50g sugar
- 450ml strong, good-quality coffee
- Cream or milk, to serve
Directions
Place the caster sugar and Special Ingredients agar agar powder in a small saucepan and mix well. This prevents the agar agar from forming lumps.
Make 450ml strong, good-quality coffee. Using less coffee gives a slightly firmer jelly, while using more gives a slightly softer jelly.
Add the coffee to the saucepan and mix well. Heat over a medium heat and bring to the boil, stirring continuously. Once the mixture starts boiling, remove from the heat.
Leave the mixture to cool slightly before pouring into jelly moulds. Remove any bubbles from the surface.
Refrigerate the jelly moulds and mixture and leave to set.
Serve with cream, milk, ice cream or yoghurt.
