A simple method for making a red onion fluid gel with agar agar.

Red onion fluid gel with agar agar

Ingredients

  • 2g agar agar
  • 500g red onions
  • 50g wine vinegar
  • 100g sugar
  • 100g water

Directions

  1. Peel and finely slice the onions.

  2. Put the onions in a pan with the sugar. Once the sugar has dissolved, add all the vinegar.

  3. Cook over a low heat until the onions are soft and the vinegar has evaporated.

  4. Meanwhile, in another saucepan, bring the water to the boil and add the agar agar.

  5. Blend the caramelised onions thoroughly with an immersion blender until the agar agar has completely dissolved.

  6. Pour into a mould and leave to cool.

  7. Once cool, blend the gel again to make it fluid. Transfer the fluid gel to a chef's squeeze bottle and use.
