  1. For the batter:

  2. In a large bowl, combine the flour, eggs, water, sugar, sunflower oil, baking powder and vanilla. Mix well until smooth. You can use an electric mixer or stand mixer to make this easier.

  3. Strain the batter:

  4. Pass through a sieve to remove lumps and achieve a smooth consistency.

Charge the siphon:

  1. Pour the strained batter into the siphon. Charge with a gas cartridge (usually N₂O) and shake well to incorporate the gas.

Fry the batter:

  1. Heat the oil in a deep saucepan to approximately 180°C (356°F). Dispense batter from the siphon into a ladle lightly greased with hot oil, then carefully lower into the hot oil. Fry the bomboloni until golden and puffed, approximately 2–3 minutes.

Coat with sugar:

  1. Remove the doughnuts with a slotted spoon and place on absorbent paper to remove excess oil. Immediately roll the bomboloni in sugar, coating all sides.

Serve:

  1. Serve the bomboloni while still warm. Enjoy plain or filled with custard, chocolate or jam, to taste.
