- 1 Tsp Baking Powder
- 1 Cup All Purpose Flour
- 1 Tsp Special Ingredients Bicarbonate of Soda
- ¼ Cup Sweetened Shredded Coconut
- ¾ Cup Whole Milk
- 1 Egg
- 5 Tbsp Unsalted Butter that has been melted and cooled
- 1 Tsp Coconut Extract

Directions
Mix the flour, sugar, baking powder, bicarbonate of soda and shredded coconut in a bowl. Whisk together and set aside.
Whisk the milk, egg, coconut extract and melted butter. Pour over the dry ingredients and mix just enough to combine. Leave the batter to rest for 10 minutes.
Heat a non-stick frying pan over medium-low heat and add 1 teaspoon of oil.
Pour 3 portions of batter into the pan. Cook for approximately 3ā4 minutes, until the underside is golden and bubbles appear on the surface.
Turn with a thin spatula and cook the other side for approximately 2ā3 minutes until golden.
Transfer to a plate and repeat with the remaining batter.
Serve with sliced banana and desiccated coconut.
