Espresso Martini with milk foam

Ingredients

    Espresso Martini

    • 50 ml vodka
    • 35 ml coffee liqueur
    • 25 ml espresso coffee

    Sweetened milk foam

    • 100 ml whole milk
    • 50 g caster sugar
    • 1.5 g Special Ingredients lecithin powder

    Directions

    1. Pour the cocktail ingredients into a shaker with ice and shake well to chill.

    2. Strain into a chilled Martini glass.

    3. Combine the milk foam ingredients and blend well.

    4. Tilt the head of the immersion blender so it sits partly above the liquid, incorporating air until a light foam forms.

    5. Just before serving, spoon the foam from the surface of the liquid onto the Martini and serve.
