Sucro (E473) – Emulsifier and Texturiser
Sucro is a powdered emulsifier obtained by esterifying sucrose with food-grade fatty acids derived from palm oil. An extremely versatile ingredient, it is used in baking, pastry, cereals, dairy products, ice cream and sauces. Often used in low-fat versions to improve mouthfeel, Sucro also gives baked goods a finer structure and softer texture, improves stability in dairy products and sauces, and enhances the texture and flavour of mousses and ice cream.
Alongside emulsification, it performs many other functions:
- Aeration to create light, stable foams
- Protein protection to prevent premature browning
- Prevention of fat and sugar crystallisation, useful for avoiding fat bloom in chocolate
- Improvement of air bubble structure, ideal for mousses and light desserts
- Acceleration of crystallisation in fine sugars
Suitable for vegans and vegetarians; non-GMO, gluten-free, non-irradiated
Directions for Use
Dissolve in water first, then slowly add to the fat phase.
To make alcohol foams, dissolve Sucro in a mixture of water and sugar, then emulsify with your chosen alcohol using a hand blender. This produces a light, stable foam, perfect for decorations, innovative cocktails and striking presentations.
Storage
Store in a cool, dry place away from direct light. Use within 6 months of opening.
