Our potassium sorbate is a high-quality, refined crystalline salt derived from sorbic acid. Its main function is to inhibit the growth of moulds, yeasts and microorganisms, extending the shelf life of food products.
It is widely used in cheese, soft drinks, fruit drinks, wine, dried meat, dried fruit, yoghurt, apple cider and baked goods. However, it is not suitable for breadmaking or baked goods containing yeast.
In wine, potassium sorbate converts to sorbic acid, preventing the remaining yeast from multiplying after final clarification. It is also used to clarify and prevent refermentation in apple cider, sweet wine and sparkling wine.
