Our calcium lactate is a high-quality product derived from lactic acid. It works well for making caviar, pearls, spaghetti and spheres using spherification techniques. Calcium lactate can also be used to coat fresh fruit and melons to keep them firm and extend their shelf life. It is a white, non-hygroscopic salt and a recommended source of calcium. It provides calcium salts in a soluble form that react with alginate, gellan or certain types of carrageenan, allowing gels to form without heating. Its taste is more subtle than calcium chloride, which can be salty and sometimes bitter. Calcium lactate is recommended for all reverse spherification reactions and reacts when alginate and calcium sources are intimately mixed, whether through diffusion or direct-contact gelling. It also works well for making drops, caviar pearls and all spaghetti shapes by immersing an alginate solution in a calcium bath. Suitable for vegans and vegetarians; non-GMO, gluten-free, kosher friendly and halal friendly.

How to use:

Use 1–9% calcium lactate to supply calcium ions in a setting bath for hydrocolloids that react with calcium ions, such as sodium alginate, gellan gum, iota carrageenan, kappa carrageenan and pectin.
This type is recommended for applications where the calcium salt is readily mixed with other ingredients and consumed, including diffusion setting and mixing alginate with calcium-rich solutions. For these applications, use at 1%. It can also be used for calcium fortification. Solubility limit: 10 g per 100 ml.

Storage: Store in a cool, dry place away from direct sunlight. Use within 6 months of opening.
