Sodium Citrate – Acidity Regulator and Stabiliser
Sodium citrate is the sodium salt of citric acid. Like citric acid and other salts, it has a slightly sour, salty taste. It is commonly known as sour salt, buffering salt or trisodium citrate and is mainly used for flavouring foods and drinks or as a preservative.
A key feature of sodium citrate is its ability to reduce the acidity of foods and liquid solutions, making it ideal for direct and reverse spherification with highly acidic ingredients. It is also used as an antioxidant in foods. It dissolves easily and acts immediately.
Use in Fondues:
Sodium citrate is especially useful for making fondues, as it helps keep the fondue smooth and uniform and liquid as it cools, preventing fat separation and maintaining a fluid, creamy cheese texture. This ensures the perfect texture for dipping bread, vegetables or other ingredients.

Directions for use:

Adjusting pH with Sodium Citrate:
To neutralise the acidity of liquids, add sodium citrate at the following percentages:
- pH 2 → + 0.3% sodium citrate = pH 5
- pH 2.5 → + 0.09% sodium citrate = pH 5
- pH 3 → + 0.03% sodium citrate = pH 5
- pH 3.5 → + 0.01% sodium citrate = pH 5
