Gum arabic powder – acacia powder
Our gum arabic powder (also known as acacia powder) is a high-quality, refined, off-white powder. This natural product is obtained from the sap of two types of wild acacia tree and is an excellent source of fibre. It is used as a stabiliser, to increase the viscosity of liquids, inhibit sugar crystallisation and prepare baked goods. Its strong adhesive properties make it ideal for coating foods.
In baking, it helps dough rise and adds natural fibre to the mixture. It can add shine to marzipan and icing: more coats produce a greater shine, allowing each coat to dry before applying the next. It is a key ingredient in fruit syrups, marshmallows, edible glitter and gummy sweets.

How to use gum arabic powder:
Recommended dosage: 1–2%. Soluble in cold water.
- For a glaze: Mix 10 g of powder with 60 ml of warm water.
- For baking: Use 5 g per 3 eggs in the recipe, adjusting the quantity to the number of eggs used.
Storage:
Store in a cool, dry place away from direct sunlight. Use within 6 months of opening.
