Our cream of tartar is a premium-quality food-grade powder, also known as potassium bitartrate. In patisserie, it adds volume and stability to meringues and soufflés, helps prevent whipped cream from losing its structure and adds creaminess to icing. When making meringue, a small amount speeds up foam formation and helps stabilise its structure, increasing volume. It prevents sugar crystallisation and acts as a raising agent in baked goods. Combined with sodium bicarbonate, it produces baking powder. A pinch added to the water when boiling vegetables helps them retain their fresh colour. How to use: Use as required. When making meringues, add approximately 1 g per egg white.
