What is Pectinex?

Pectinex is a special enzyme that breaks down the structure of pectin. Commonly used in the fruit juice industry, it also has unique applications in modern cooking. It can remove the peel and membranes from citrus fruit without a knife, giving a clean result. It can also remove pectin from fruit juices and ciders, improving their clarity and flavour. Suitable for vegans and vegetarians; non-GMO and gluten-free.

How to use:

To remove membranes from fruit segments:

1. Immerse 250 g of fruit segments in 250 ml of water.
2. Add 2.5 ml of Pectinex.
3. Stir the solution and seal the container.
4. Refrigerate for 48 hours, or cook sous vide at 40°C for 30 minutes.
5. Remove the segments from the solution and serve.

To remove pectin from fruit juices:

1. Add 2.5 ml of Pectinex to 1000 ml of fruit juice (0.25%).
2. Leave at room temperature for 20 minutes.
3. Filter the juice to remove solids.

Storage:

• Store in a cool, dry place away from direct sunlight.
• After opening, refrigerate and use within 1 month.
