    1. Prepare the mandarin spheres: combine the purée, calcium lactate and xanthan gum in a blender and blend for 2 minutes.

    2. Leave to rest for 6 hours, or strain through muslin and a fine sieve to remove air from the mixture.

    3. Fill the spherical moulds with the mixture and freeze.

    4. Alternatively, scoop spoonfuls of liquid using the measuring spoons.

    5. Prepare the sodium alginate bath: add 5g Special Ingredients sodium alginate to 1 litre of water and blend for 2 minutes. Leave to rest for 24 hours, degas with a vacuum machine, or strain through muslin and a fine sieve to remove air.

    6. Immerse the frozen spheres or the spoon in the alginate solution.

    7. Leave to react for 3 minutes. Remove the spheres and rinse with clean water.
