Ingredients
- 250g full-fat Greek yoghurt (or lactose-free, if preferred)
- 100g mixed berries (fresh or frozen)
- 20g Specialingredients short-chain inulin
- 8g vanilla extract
- Fresh mint to garnish (optional)
Directions
In a medium bowl, combine the Greek yoghurt, short-chain inulin and vanilla extract. Mix well until the inulin has completely dissolved and the mixture is smooth and uniform.
If using frozen berries, let them thaw slightly. Mash some with a fork for a coarse purée, or leave whole for a chunkier texture.
Gently fold the berries into the yoghurt mixture.
Divide the mousse between four dessert bowls or glasses.
Cover with cling film and refrigerate for at least 2 hours, or until well chilled and slightly firmer.
Before serving, garnish with a few fresh mint leaves if desired.
