Ultratex: what it is, how much to use and when to choose it
Ultratex is a waxy maize starch formulated to thicken liquids, including without heat. It adjusts sauces and purées without a new cooking stage, keeping the process controlled.
What to expect
The result is a thicker preparation, not automatically an unmouldable jelly. Base composition affects behaviour: consider water, sugar, fat and alcohol before transferring a formula to another liquid.
An almost water-free base cannot be treated like juice. Similarly, alcoholic preparations are not universally suitable or universally excluded: test the actual formula.
How to add it
Incorporate Ultratex gradually while mixing. Rest for a few minutes and assess texture before completing the dose. Weigh powder and base for repeatability.
For a squeeze-bottle sauce, check using that tool; for a hot dish, taste at serving temperature. Texture in the bowl is not always the texture needed on the plate.
Other approaches
A thickened base can also be explored for a dried sheet, but needs a suitable formulation and separate process. The fruit glass guide distinguishes this from thickening.
For a simple application, start with tomato cream. For a defined gel, read the agar agar comparison. Storage and shelf life depend on the complete recipe: starch is not a preservative.
