Spherified mojito: a reverse spherification trial

Reverse spherification can turn a mojito-inspired base into a bite with a thin membrane. An alcoholic version needs attention to freezing and texture: the same formula does not behave like a simple water-based drink.

Trial ingredients

  • 150 g balanced, strained mojito base, with or without alcohol
  • 3 g calcium lactate
  • Up to 0.5 g xanthan, optional and added gradually
  • For the bath: 600 g low-calcium drinking water and 3 g alginate
  • Separate drinking water for rinsing

Prepare bath and base

Disperse alginate in the bath water and rest to reduce bubbles. Mix lactate into the base. If more viscosity is needed, incorporate only the necessary xanthan: the full stated amount may be excessive for some bases.

Form the spheres

Use a measuring spoon or small moulds if the composition allows effective freezing. Do not assume an alcoholic base freezes in two hours.

Immerse a portion and test the first sphere: this version suggests approximately 3 minutes, but size and base require checking. Retrieve and rinse gently in clean water. Taste the membrane before making all portions.

Serve with care

Store according to the drink’s requirements and make an amount suitable for service. Do not heat the alcoholic base to accelerate the process. Find the method in the reverse spherification guide and compare the mandarin version.
