Our xanthan gum is 200 mesh compared with the standard 80 mesh, making it finer and easier to disperse and dissolve. Xanthan gum is a food additive commonly used as a thickener, stabiliser, emulsifier and foaming agent. It is generally considered non-gelling and is used to control viscosity: its weak molecular associations give it weak-gel, shear-thinning properties. When combined with other hydrocolloids, however, it can produce gels. Add it to agar agar and kappa carrageenan to form a more stable gel. Its consistent water-holding capacity helps control syneresis and delay ice recrystallisation (ice crystal growth) during freezing and thawing. In pastry fillings it helps prevent water leaking from the filling, protecting the crispness of the crust. It can also help prevent ice crystal formation in ice cream. A very small amount (around 1%) markedly increases a liquid's viscosity, although most applications use 0.5% or as little as 0.05%. It is often used in salad dressings and sauces, where it stabilises emulsions to prevent oil separation and helps suspend solid particles such as spices. In frozen foods and drinks it creates a pleasant texture without changing colour or flavour. Suitable for vegans and vegetarians; non-GMO and gluten-free.
