Lamb, onion and shallot: textures inspired by Heston Blumenthal
A lamb dish can also be understood through its accompaniments. Onion and shallot provide sweetness, intensity and different textures: the dish associated with Heston Blumenthal offers inspiration for arranging them on the plate.
Purée as a designed element
A purée is more than a soft side dish. Its texture must withstand service and its quantity suit the meat. Onion cooking, concentration and added liquid change flavour and structure.
Hydrocolloids can help develop a defined texture, but a dose calculated from raw onion weight does not automatically correspond to finished purée weight.
Gellan and formulation
The gellan family includes grades with different behaviour. Blends can adjust firmness and elasticity, while salts, base and process remain decisive. No formula should be assumed to tolerate unlimited heat.
Finished base weight is the necessary reference for additions. This analysis concerns component functions and does not present the chef’s official recipe.
A useful trial
Make a purée with a repeatable method, weigh it and assess texture before additions. If adjustment is needed, choose an ingredient according to service conditions and test a sample.
For simpler adjustment, compare Ultratex without heating and xanthan. They are not equivalent to a gellan gel: choose among these different approaches according to the required result.
