Easy Binder: binding and structuring ingredients without heat

Easy Binder is a formulated binder for structuring sweet and savoury preparations. It can be explored for vegetable terrines, burgers and portionable mixtures, but formula and resting conditions must suit the chosen ingredients.

What it contains

The system combines sodium alginate, a calcium source and other salts to manage structure formation. It differs from transglutaminase, which acts on proteins. Choosing between them requires understanding the base and intended result.

Always check the label and documentation of the purchased product, including allergens. The powder’s suitability does not automatically establish that of the complete recipe.

The process in brief

The manufacturer specifies mixing the product with cold water, combining it with ingredients and compacting without air pockets. Water and binder doses depend on the application: use the specific technical-sheet formula.

Structure develops during refrigerated resting; documentation specifies 2–5 °C and 8–24 hours depending on the application. Do not shorten the process by increasing powder without testing.

After setting

Assess cutting, stability and bite before cooking or freezing the whole batch. Do not assume generic resistance to extreme temperatures. Performance depends on the complete preparation.

The product does not sanitise meat, fish or vegetables or replace hygiene and appropriate cooking. Compare the technical discussion of alginate patties and transglutaminase guide.
