Culinary whippers: choosing a model and a suitable base
A culinary whipper dispenses aerated preparations, but results depend on both the recipe and the equipment. Cream whippers, models for hot preparations and equipment for different gases have specific limits and instructions.
Start with the model’s manual
Check maximum capacity, permitted temperatures, charger type and the specified number of cartridges. Do not infer these from the colour of a band or the bottle material alone. N₂O, CO₂ and nitrogen are not interchangeable: the equipment and application must be expressly compatible.
Do not add extra chargers to speed up service. Never open or force equipment under pressure. If the dispenser is blocked, follow the manufacturer’s support procedure before intervening.
A smooth, strained base
The mixture must be homogeneous and free of particles that could block the outlet. Strain carefully and respect the maximum filling level. A preparation that is too thick or sets inside the container may be unsuitable for dispensing.
Read the manual for charging orientation, number of shakes and temperature maintenance. Instructions for one model do not automatically apply to all culinary whippers.
Before and after service
Check seals and components, use only compatible replacement parts and chargers, and clean as instructed. Handle and store the base according to its ingredients’ requirements: pressure does not sterilise the preparation.
