A simple way to do a fluid gel with agar agar

2 grams Agar agar
500 grams Red Onions
50 grams Vinegar
100 grams Sugar
100 grams Water
Clean and slice the onions thinly
Put the onions in a pan with the sugar and when sugar is dissolved add all the vinegar.
Cook on low heat until the onions become soft and the vinegar has evaporated
In the meantime, in another saucepan, bring the water to a boil and add the agar agar
Blend caramelized onions with an hand blender well until the agar agar has completely dissolved
Pour the mixture into a mold and let it cool
Once cooled, blend again the gel to make it fluid. Put fluid gel in to a chef bottle and use it
