This Suspension Syrup Recipe is used in several of our Molecular Gastronomy Cocktail recipes. Learn how to make the recipe with just 3 ingredients.
150g Caster Sugar
150ml Water
1g Special Ingredients Xanthan Gum
Combine the sugar and water in a pan and heat while stirring until the sugar is completely dissolved.
Allow the syrup to cool at room temperature then blend in the Xanthan Gum until the mixture thickens slightly. Finally, pass through a fine sieve.
This will keep well in the fridge for a week.
