Experience the Gin Martini Cocktail with a modern twist! Infused with the refreshing flavor of orange and featuring liquid-centered chocolate pearls, this cocktail is served in a glass with a sugared rim, finished with a touch of orange zest and Crackle Crystals.

20 g sugar
20 g Crackle Crystals
orange Zest
35 ml cointreau
50 ml gin 35
ml syrup
20 g Calcium Lactate
1 lt water
400 gr water (low calcium water)
200 gr sugar
70 gr cocoa powder
40 ml gin
5 gr Sodium Alginate
Combine the ingredients in a bowl. Dip the rim of the glass in a little mild olive oil, shake off the excess, then dip the rim into the orange sugar powder.
Pour all ingredients into a glass filled with ice and stir to chill. Strain the drink into the prepared glass with the Orange Crackle Crystal rim.
Mix water and Calcium Lactate thoroughly and allow to settle.
Blend water and Sodium Alginate. Add cocoa powder and sugar to the blender and mix well. Strain the mixture through a sieve or muslin to remove air bubbles. Use a pipette or syringe to drop the chocolate mixture into a calcium bath (see additional recipes) to create caviar pearls. Let the pearls react for thirty seconds, then remove them with a slotted spoon and rinse in fresh water. Stir a spoonful of chocolate pearls into the drink. Serve immediately after preparation.
